Spices and Seasonings





Spices are dried seeds, fruits, roots, barks, or vegetative substances used in nutritionally insignificant quantities as a food additive for flavor, color, or as a preservatives.

Seasonings is the process of imparting flavor to your food. Louisiana has it's own variety of seasonings. Cajun seasonings are sometimes used in Louisiana kitchens, but do not suit every cook's style because Cajun-style seasoning is often achieved from scratch, even by taste. Whole peppers are almost never used in authentic Cajun dishes — ground Cayenne, paprika, and pepper sauces predominate.



Louisiana is known for our seasonings, but the most popular is Crab Boil. Crab Boil is a seasoning that is used to boil your crawfish, shrimp, or crabs.

Cajuns have over the years used certain seasonings for their recipes and meals. Most of these cajun seasonings are made from memory and taste with every serving having a different flavour. There are some great brands on the market that are either a cajun or creole seasoning.

I have grown up in Louisiana and one thing is for sure. We definitely know how to season a meal. There are many seasonings that we use to help bring out the flavour in our cajun dishes. Cayene pepper is one of our hottest Louisiana spices. It is used on any dish that has a need for heat. It is also used alongside other seasoning to complement any recipe.
